In the summer, the temperature is often too high. If the fermentation is vigorous, the temperature will reach a high temperature of around 60 degrees. The best fermentation temperature is around 40 degrees. Add water to cool down when the temperature is too high. So winter, spring fermentation rate is slow, about two months will be stable to use, summer and autumn, a month. When fermenting, it is often stirred, a little like ploughing vegetables, about once every three or four days.
